I'd be interested to compare the flatness after lapping to before on a CMM or form tester.

on any rotary engine if rebuilding, is it recommended to skim the side plates?

Not really, check the wear depth at the spark plug side/opposite
Max is .004 -.006" on N/A for road going and .006" for racing.
For turbo's max .004" due loss of pressure and leaked.
if it is skim by grinder/lapping work. end play must replace and inlet manifold/exhaust header must be drilled out ovally to fit back.
Also important to do when it doing by grinding, plate must be dead square to stationary gear or the E shaft will eat the bearing.. I know cos I've been there.( I was a grinder..)
Too many to talk about it there and that..
if unsure, give to real expert( Don't give to RX8 so-called specialists) to check it out.
